This is the time the prices reach their highs. After that, the prices start dropping, unless natural disasters occur which influence the future harvest.

For day trading, the most interesting time frame is between 4:30 and 7:15 PM GMT, when both liquidity and volatility increase, which helps you maximize your profit.
